In the valleys of Ome, a brewery with more than three centuries of history opens its Edo-period buildings and areas normally closed to visitors. Your guide is the 23rd-generation owner and brewmaster, or his predecessor.
Afterwards, in a private room of the brewery's traditional restaurant, you compare five varieties of sake with snacks the chef has created to pair with them. Brewing itself can only be seen in the winter brewing season.
